Watermelon Feta Salad with Mint and Pomegranate

Watermelon is officially in season, and what better way to incorporate it into your diet than through a salad. This salad recipe is light yet filling and plays with texture combinations. Serve with a barbeque meal, a hearty brunch or eat it simply by itself for lunch.

Ingredients
1/4 of a large watermelon
1 bunch of mint (at least 10 large leaves)
1/3 cup pomegranate seeds
1/2 - 1 cup feta cheese, crumbled
1 lime, zested and juiced (only need juice of half the lime)
1 tbsp. olive oil
Requires
1 large serving or mixing bowl
Directions
1. Cut watermelon into 1-2 inch cubes that are roughly the same size.
2. Finely chop mint.
3. In a large bowl, combine watermelon, pomegranate seeds, feta cheese and mint, in that order. Toss lightly. Then, drizzle olive oil, lime juice and top with zest.
4. Enjoy!
