This is the embodiment of Christmas on a plate, as an appetizer. Fluffy whipped honey goat's cheese topped with shiny pomegranate bruschetta, made flavorful by basil, mint, red onion and balsamic vinegar.
Ingredients
Arils of one pomegranate
1/4 cup red onion, finely chopped
1 bunch of mint (about a 1/4 cup), finely chopped
1 bunch of basil (about a 1/4 cup), finely chopped
1-2 tbsp. balsamic vinegar glaze (this is a quick and easy recipe on how to make it https://cafedelites.com/balsamic-glaze/ or you can use store bought)
1 baguette, cut into crostinis
About 1 cup goat's cheese (unflavoured)
1-2 tbsp. honey
2 tbsp. olive oil
Directions
Place baguette slices on a baking sheet. Drizzle with 1 tbsp. olive oil and bake at 400 for 15 minutes, until golden.
In a blender or food processor, blend goat's cheese, honey and 1 tbsp. olive oil. Blend until fully mixed and fluffy. This make take going in with a spoon and shifting to ensure its blended. Set aside.
To make the bruschetta, combine pomegranate arils, red onion, mint, basil and balsamic glaze in a bowl. Mix well.
Top crostinis with a generous spread of honey goat's cheese, and a dollop of bruschetta.
