Grilled Halloumi Avocado and Grapefruit Salad

This salad combines the fan favourite squeaky cheese - halloumi - with juicy chunks of grapefruit, refreshing mint and creamy avocado. All tied together with crispy leaves and a sweet honey- olive oil dressing, this salad recipe brings multiple dimensions of flavour.


Ingredients

5-6 slices of halloumi cheese

4 cups spring mix salad (or any lettuce if your choosing)

1 grapefruit

1 bunch of fresh mint

1 avocado

1 tablespoon of honey

salt

olive oil


Requires

1 stovetop sauté pan or grill pan, or barbecue

1 mixing bowl

1 whisk or fork


Directions

1. Peel the grapefruit, the same way you would an orange, and separate into two halves. Continue to peel one half, separating the wedges, and peeling the papery skin off each wedge (optional). Squeeze and juice the other half into a mixing bowl, to be used for the dressing.

2. Add the honey, and about 1-2 tbsp. olive oil, and a dash of salt to the mixing bowl and whisk together.

3. Roughly chop the mint leaves and peel and slice the avocado.

4. Heat the pan or skillet, with a tsp. olive oil on medium high. Once hot, place a few slices of the halloumi on. Sear each side for 1-2 minutes, until golden brown. Set aside. 5. Combine greens, mint leaves, salad dressing, grapefruit and avocado together in the mixing bowl. Top with halloumi. 6. Enjoy!
