Fresh Grilled Halloumi Salad with Mint

This recipe is result of experimentation with some fresh ingredients I happened to have in my fridge. I suppose I accidentally made a masterpiece of a recipe. This salad is incredibly light and fresh tasting while also satiating thanks to protein packed Halloumi cheese. This has become a quick and easy lunch go-to of mine.





Substitutions: You can use any vegetables you'd like - these just happen to go really well together.


Prep time: 5 minutes

Cook time: 2 minutes

Total time: 7 minutes


Ingredients

1 avocado, diced

1 lemon, juiced

1 big tomato (or two small Roma tomatoes), diced

3/4 cup cucumber, sliced and halved

2 slices of halloumi

2 tbsp. olive oil

1 small bunch of mint, roughly chopped

salt and pepper to taste

**Makes 1-2 servings

Stovetop saucepan

Directions

  1. Heat 1 tbsp. olive oil in a stovetop saucepan on medium high for about 1 minute. Add halloumi and cook on each side for about 2 minutes until golden brown on each side.

  2. Toss avocado, tomato, mint and cucumber in a bowl with lemon juice, salt, pepper and olive oil. Top with grilled halloumi.

  3. Enjoy!
