This recipe is result of experimentation with some fresh ingredients I happened to have in my fridge. I suppose I accidentally made a masterpiece of a recipe. This salad is incredibly light and fresh tasting while also satiating thanks to protein packed Halloumi cheese. This has become a quick and easy lunch go-to of mine.
Substitutions: You can use any vegetables you'd like - these just happen to go really well together.

Ingredients
1 avocado, diced
1 lemon, juiced
1 big tomato (or two small Roma tomatoes), diced
3/4 cup cucumber, sliced and halved
2 slices of halloumi
2 tbsp. olive oil
1 small bunch of mint, roughly chopped
salt and pepper to taste

Directions
Heat 1 tbsp. olive oil in a stovetop saucepan on medium high for about 1 minute. Add halloumi and cook on each side for about 2 minutes until golden brown on each side.
Toss avocado, tomato, mint and cucumber in a bowl with lemon juice, salt, pepper and olive oil. Top with grilled halloumi.
