Creamy, Dreamy, Garlic-Parmesan Cauliflower Mash

Fluffy, buttery, garlicky, cheesy cauliflower - basically perfect clouds of yumminess - is what you can expect from this recipe. This cauliflower mash is what creamy dreams are made of. It is the perfect low carb side dish that is packed with flavour and will leave your mouth watering. Pair with a main of grilled meat and another fresh vegetable side for the ultimate tasty low carb meal.

Ingredients
1 large cauliflower cut into florets
1/3 cup of unsalted butter
5 cloves of garlic (peeled and minced)
1/3 cup of grated parmesan cheese
1 bunch of fresh parsley (optional for garnish)
Salt and pepper to taste
Olive oil
Makes 8 servings
Requires
1 large pot with lid
A blender or food processor
1 steamer (optional)
1 strainer or colander
Estimated cook time
25 minutes
Directions
1. Cook the cauliflower florets by placing using a steamer for 10 minutes or boiling in a large pot of salted water for up to 15 minutes until tender to a fork
2. Drain the cauliflower using a colander or strainer, cover and set aside for 10 minutes (this is the key to an ultra-fluffy mash)
3. Meanwhile, soften the butter using a pot or the microwave
4. In a blender or food processor, combine the cauliflower, softened butter, grated parmesan cheese, minced garlic, a touch of olive oil and salt and pepper.
5. Blend on high until smooth (This may need to be done in 2 or 3 batches, depending on the size of your blender/processor)
6. Finely chop the bunch of parsley and garnish the mash (optional)
7. Enjoy!
