Cauliflower Steaks with Chimmicurri Sauce

This year, I've consciously reduced my meat intake and have dedicated one day a week to eating vegetarian meals. Cauliflower is one of my favourite vegetarian alternatives, not only because it's tasty, but also because it's low in calories compared to other vegetarian meal alternatives. Cauliflower "steaks" are an easy, cost effective and tasty vegetarian dinner that I've been making quite often. I typically throw them on the barbeque or in the oven, season generously and serve with a delicious sauce. This recipe shows you how to cut the cauliflower into steaks, roast them and how to make a the delicious green chimichurri sauce.


Pro Tip: To cut the perfect cauliflower steak, be sure to buy the biggest head of cauliflower in the market, seriously, the bigger the cauliflower, the more steaks you'll be able to cut and it will yield bigger steaks. When you're ready to start cooking, peel the leaves off of the cauliflower head, and cut most of the stem off. Be sure not to but off too much stem, as the cauliflower will not stay intact, and the florets will start to crumble off. Next, place the cauliflower stem down on a cutting board and make one large slice through the middle. Then, cut each half into 3/4 inch slices, these will be your steaks. Ingredients (Makes 1-2 servings)

CAULIFLOWER STEAKS

1 large cauliflower head, cut into steaks

1 tbsp. paprika

1 tbsp. onion powder

1 tbsp. garlic powder

1 tbsp. cumin

Several twists of salt and pepper

2 tbsp. olive oil

CHIMICHURRI SAUCE

1/4-1/2 cup olive oil

1/3 cup fresh parsley

1/2 cup fresh cilantro

2 cloves of garlic

Several twists of salt and pepper


Requires

1 blender

1 sheet pan

1 small bowl

Aluminum foil


Directions

  1. Heat oven to 425 F.

  2. Combine all cauliflower spices and salt in a small bowl to form a spice mix. Then, place steaks on a sheet pan and sprinkle spice mix on both sides. Rub on an excess spice mix with your hands. Drizzle with olive oil and bake for 10-15 minutes with an aluminum foil cover. Bake for another 10-15 minutes without foil, carefully flipping halfway. Steaks should be browned and golden.

  3. To make the sauce, combine and blend all ingredients in a blender or food processor on high.

  4. Drizzle sauce over steaks generously.

  5. Enjoy!
