Caprese Pasta Salad with Sun Dried Tomatoes

This Caprese Pasta Salad combines the ultimate Italian flavour combination of bocconcini, fresh basil and cherry tomatoes with the elevated addition of juicy sun dried tomatoes. This is a simple yet delicious vegetarian recipe that will quickly become one of your favourites!

Ingredients
1 cup of fusilli pasta (I use brown rice pasta)
1/2 cup bocconcini pearls cut in half
1 bunch of fresh basil, roughly chopped
1/4 cup sun dried tomatoes roughly chopped
2/3 cup cherry tomatoes
2 tbsp. olive oil
Freshly cracked pepper to taste
Coarse salt to taste
Requires
1 pot
1 large mixing bowl
Cooking time
20 minutes
Directions
1. Fill a medium pot with water, add a generous amount of salt, place on high heat and bring to a boil
2. Add pasta and cook for up to 15 minutes until desired texture is reached (I prefer al dente)
3. Strain pasta and let sit to cool for up to 3 minutes
4. Transfer to a mixing bowl and mix in sun dried tomatoes, cherry tomatoes, bocconcini, olive oil and fresh basil
5. Top with fresh cracked pepper and coarse salt
6. Enjoy!
