Thyme Peach Cobbler

Summer peaches are the M.V.P. of summer fruit. This recipe uses juicy, sweet, golden summer peaches and combines them with thyme to make a summer peach cobbler. If you've never cooked or baked with thyme, it's an incredibly versatile and fragrant herb. It has a light, earthy essence and pairs well with buttery sweet dishes like a cobbler.



Substitutions:

This recipe can easily be made more healthy with substitutions. To decrease the level of sugar in the recipe: use half the amount, use a combination of sugar and honey, use splenda or stevia instead (use a 0.5:1 ratio of splenda or stevia to sugar in the recipe). If you'd like to sub out the white flour, oat flour would be a great alternative option.


Pro tip:

An easy way to get the sprigs (little leaves) off the thyme stem is to hold the thyme stem firmly at the bottom using two fingers, and run your fingers up the stem, releasing the sprigs.


Ingredients

Peach filling

5-7 peaches, peeled and sliced

1/4 cup sugar

2 tsp. thyme sprigs

Cobbler topping

1 cup all purpose flour

3/4 cup sugar

1/2 cup salted butter, melted

1 tsp. baking powder

1 tsp. vanilla extract

1/2 tsp. salt

1/2 tsp. thyme sprigs

sprinkle of brown sugar (optional)


Requires

1 deep baking pan

1 wooden spoon

1 mixing bowl


Directions

1. Heat oven to 350 degrees F. Grease baking pan with butter. Add peaches, sugar and thyme to the pan and mix using a wooden spoon. Set aside.

2. In a mixing bowl, mix flour, sugar, butter, baking powder, vanilla and salt until a cookie dough like dough forms. This may require using your hands to press the dough together.

3. Place scoops or bits of the dough on the peaches in the pan, and slightly press down and spread the dough to ensure peaches are mostly covered.

4. Bake for 30-40 minutes. Remove when bubbling at the edges. Once removed, heat oven to broil. Sprinkle thyme sprigs and brown sugar (optional) over the crust and broil for up to 1 minute. Remove when crust is golden.

5. Serve with a scoop of vanilla ice cream and enjoy!
