Brown Rice and Ground Chicken Stuffed Peppers

Stuffed peppers don't have to be boring!! Not only is this recipe extremely tasty and packed with flavour, but the combination of brown rice with chicken and veggies is extremely healthy. It is sure to leave you satiated without adding unnecessary calories. The perfect guilt free weeknight dinner with leftovers for the next day… if they can last that long!





Ingredients

1/2 cup long grain brown rice

1 cup water

6 large bell peppers

900g ground chicken

½ large yellow onion

1 jalapeno pepper (optional as garnish)

1 bunch of cilantro (optional as garnish)

1 chili pepper

6 tbsp. tomato paste

4 tbsp. chili powder

2 tbsp. cumin

2 tbsp. paprika

1 tbsp. garlic powder

1 tsp. dried onion

olive oil

salt and pepper to taste

Makes 6 servings (1 stuffed bell pepper = 1 serving)


Requires

1 medium pot

1 spatula or wooden spoon

1 large saucepan (or 1 medium to cook meat in 2 rounds)

1 large baking sheet

55 minutes


Directions

1. Pre-heat oven to 450 degrees Fahrenheit

Brown Rice

2. Using a 2:1 ratio of water to rice, combine rice, water and up to 1 ½ tsp. of oil or fat in a medium pan and bring to a boil (or follow the directions on your long grain rice package).

3. Cover with a tight-fitting lid, reduce heat to low and let simmer for 40 minutes

4. Remove from heat after 40 minutes and let sit for 10 minutes with the lid on

5. Add white bottoms of the scallions/green onions

Fresh Ingredient Prep

6. Finely chop the ½ yellow onion, slice jalapeno pepper and roughly chop cilantro

7. In one clean cut, cut the top off the red pepper and remove the seeds so that the peppers are completely hollow

Ground Chicken

8. In a large or medium saucepan, heat 3 tbsp. of olive oil at medium high

9. Add ground chicken with S&P to taste

10. Using a spatula or a wooden spoon, separate the ground chicken into small chunks as it cooks

11. Add all spices and tomato paste

12. Cook for up to 20 minutes until caramelized, and no longer pink

13. In the same pan, cook yellow onions for up to 10 minutes, until caramelized

13. Mix chicken and onions into cooked rice in large bowl

Stuff Peppers

14. Using a spoon, add chicken, onion and rice mixture to hollow bell peppers

15. Place peppers upright on a baking sheet and bake up to 20 minutes at 400 degrees

16. Garnish with cilantro and jalapenos

17. Enjoy!
