Simple Pesto Spaghetti with Pan-Seared Shrimp

This recipe hails the classic simplicity of basil pesto, spaghetti and shrimp, all tied together with fresh parmesan. It combines simple, fresh ingredients making it easy to make and to get creative with. Think of this recipe as a canvas, with endless possibilities of additions like roasted cherry tomatoes, spinach and pine nuts. One thing this recipe does not disappoint on is flavour.

Ingredients
2 cups of spaghetti, cooked (I prefer whole wheat or chickpea)
1 cup fresh shrimp
1/4 cup freshly grated Romano or Parmesan-Reggiano cheese
1/2 lemon, juiced
1/3 cup basil pesto
1 tsp. butter
1 tbsp. olive oil
salt and pepper
Requires
stove top saucepan
Directions
1. Heat a stovetop pan with olive oil on medium for about a minute, until oil is glossy.
2. Add shrimp, and season with salt and pepper. Once the shrimp start to curl, add the butter and the lemon juice. Stir and flip the shrimp occasionally, ensuring an even cook on both sides for up to 10 minutes.
3. Add the pesto to the spaghetti, mixing to ensure an event coat.
4. Top spaghetti with shrimp.
5. Add freshly grated cheese.
6. Enjoy!
