Piri-Piri Chicken Wings

Upgrade your sauce game with this smoky, spicy and tangy piri-piri chicken sauce recipe. It is the perfect sauce for any cut of chicken, especially chicken wings because you can toss your wings in it and serve it on the side as a dipping sauce.

Ingredients

1 lbs chicken wings

1 red pepper

1 yellow onion

4 cloves of garlic

3/4 cup lemon juice

Zest of 1 lemon

1/2 cup apple cider vinegar

10 small red Thai chilis

2 tbsp. smoked paprika (or plain paprika)

2 tbsp. oregano

2 bay leaves

2 tbsp. sea salt (and a little extra for chicken seasoning)

1 tbsp. black pepper (and a little extra for chicken seasoning)

1/4 cup extra virgin olive oil (and a little extra for cooking wings)

Blender or food processor

Saucepan

Grill pan or barbeque

Cutting board

Mixing spoon/spatula

Cloth or paper towel

Mixing bowl


Directions

Piri-Piri Sauce

  1. Roughly slice the red pepper and onion. Next, roast them by placing them on a barbeque or grill pan on medium-high heat. You want to get char marks on pepper and onion so adjust the heat as needed. Once they've been substantially charred, remove them from heat and transfer to a cutting board.

  2. Roughly chop the onion and pepper further then transfer them to a food processor or blender. Blend until well pureed.

  3. Add in the garlic, 1/4 cup lemon juice, 1/4 cup apple cider vinegar, lemon zest, red Thai chilis, paprika, oregano, salt and pepper to the blender/processor with the onions pepper puree and blend well.

  4. Transfer the sauce to a saucepan on medium heat. Add the bay leaves and simmer slowly for 20-30 minutes, stirring occasionally.

  5. Remove from heat, let cool for 5-10 minutes. Then transfer back to the processor/blender, add in the additional 1/4 cup lemon juice, 1/4 cup apple cider vinegar and lemon zest. Blend well, then slowly stir in the olive oil with spoon.

Chicken wings

  1. Heat a grill pan or barbeque to medium-high heat. Spray or drizzle with oil if you suspect wings will stick.

  2. Pat chicken wings dry with a cloth or paper towel. Season with salt and pepper and cook on each side for about 10-12 minutes until fully cooked and juices run clear. Don't turn off the heat.

  3. Transfer wings to a mixing bowl. Add desired about of piri piri chicken sauce (I used about 1/2 cup) and toss.

  4. Transfer the wings back to the grill/barbeque and cook for an additional 4-5 minutes on each side.

  5. Serve with extra Piri-Piri sauce on the side.

  6. Enjoy!
