Updated: Jun 24, 2020

This recipes gives you the perfect seasoning for chicken drums and for any cut of chicken really. The combination of spices is subtle and doesn't pack a huge punch of heat yet become delightfully flavourful when grilled. It's an easy recipe which can be made on stovetop and or on the barbeque.

Ingredients

6-8 chicken drumsticks (skin on or off, depending on your preference)

1 tsp. cumin

1 tsp. mild chilli powder

1 tsp. paprika

1 tsp. paprika

1 tsp. onion powder

1 tsp. garlic powder

1 tsp. salt

1 tsp. black pepper

1 tbsp. olive oil

Requires

Mixing bowl

Cast iron skillet or grill pan (if you're making this on stovetop, you want a pan you can transfer from the stove into the oven)

OR

Barbeque

Directions

1. In the mixing bowl, combine all spices and salt. Pat chicken dry and add them to the mixing bowl, evening coating each piece with spice.

2. Heat oil on cast iron grill pan on medium high. Place chicken on the pan and cook on each side for about 5 minutes. Heat oven to 400 degrees F. When grill marks and some colour starts appearing on the grilled sides of the chicken, place it in the oven to cook thoroughly for up to 20 mins (or until juices run clear). If you're using a barbeque, place chicken on the grill, close the grill and cook for up to 30 mins (or until juices run clear), turning the chicken every 10 mins or so.

3. Enjoy!
