Maple Glazed Roasted Brussel Sprouts with Pancetta

This recipe takes a healthy staple in many kitchens - brussel sprouts - and adds a sweet and savoury twist, making them a delicious snack or side dish. These sprouts are golden brown on the outside, tender on the inside and pair perfectly well with savoury pancetta and a light maple glaze. This recipe is the best way to eat your brussel sprouts.

Ingredients
4 cups of brussel sprouts, trimmed and cut in half through the core
1/2 cup (or about 40 grams) of diced pancetta (about 1/4 inch thick)
1/3 cup of maple syrup
Salt and pepper
Olive Oil Makes 6-8 servings
Requires
1 sheet pan
Estimated cook time
35 minutes
Directions
1. Preheat the oven to 400 degrees Fahrenheit
2. Spread the brussel sprouts and diced pancetta onto a sheet pan into one even layer
3. Drizzle about 1/4 cup of olive oil, and salt and pepper to taste
4. Mix with your hands or a spatula and bake for 20-30 minutes, tossing halfway through cooking
5. Remove from the oven and drizzle immediately with maple syrup and toss again
6. Enjoy!
