Greek Marinated Grilled Chicken Thighs

A flavourful marinade can elevate a simple cut of chicken to next level tasty. This recipe combines classic Greek flavours: lemon, oregano, greek yogurt and olive oil to create juicy tender grilled chicken thighs. The best part of this recipe is the fact that it is versatile and the marinade can be used for any cut of chicken!

Grilled chicken is a classic go-to dinner and lunch. This recipe elevates grilled chicken thighs and pairs the savoury nature of the chicken cut with a light and zesty marinade. This Greek inspired marinade can be used for other cuts of chicken. Requiring minimal ingredients, and cooking tools, this recipe should be a staple in your kitchen when it comes to grilled chicken.


Ingredients

8 boneless skinless chicken thighs

1/3 cup of plain greek yogurt

4 lemons, one zested and all juiced (save a couple slices for a garish)

5 cloves of minced garlic

2 tbsp. of oregano

1 tbsp. of chilli flakes

1 bunch of parsley (optional for garnish)

Salt and pepper

Olive oil

Makes up to 6 servings


Requires

Barbeque, frying pan, or cast iron grill

Basting brush

Freezer bag or bowl for marinating

Spatula


Estimated cook time

30 minutes (excluding marinating time)


Directions

1. Place the chicken thighs in a freezer bag or bowl

2. In a separate bowl combine greek yogurt, lemon juice and zest, garlic, oregano, chilli flakes, salt and pepper and about 1/4 cup of olive oil

3. Add most of the marinade (set some aside for basting) to the chicken, mix with your hands or a spatula and set in the refrigerator for at least 30 minutes and up to 3 hours

4. Once marinated, heat the barbeque or pan to medium-high

5. Cook the chicken, for 10-15 minutes on each size while basting with the leftover marinade intermittently

6. Cook until chicken juices run clear (or is no longer pink in the center)

7. Finely chop the parsley and garnish

8. Enjoy!
