Fluffy Cream Cheese Cookies

This recipe is the perfect marriage between two delicious desserts, cheesecake and sugar cookies. Did I also mention that these cookies are incredibly easy to make? When you're looking to use up some leftover cream cheese or you're looking for a different type of cookie, other than the classic chocolate chip or sugar give these, sweet and chewy, cookies a go, they won't disappoint!


Ingredients

1/2 cup unsalted butter at room temperature

1/4 cup cream cheese at room temperature

1 1/2 cups icing sugar (+ extra for sprinkling)

1/2 tsp. baking powder

1 egg

1/2 tsp. vanilla extract

1 3/4 cups all purpose flour or pre-sifted flour

**Makes about 24 cookies


Requires

Mixing bowl

Hand or standing mixer or wooden spoon

Baking sheet and parchment paper


Directions

1. Cream together butter and cream cheese in a large mixing bowl. Once thoroughly creamed, add in sugar slowly and beat until a fluffy mixture forms.

2. In the same bowl, beat in the egg, add the flour slowly followed by the baking powder and the vanilla. Mix well until a dough is formed.

3. Chill dough for 1-2 hours in the fridge.

4. Preheat oven 375 degrees and line a baking sheet with parchment paper, (you can do this with two cookie sheets or do two batches).

5. Roll cookie dough into small balls, sprinkle with icing sugar and lightly press down, flattening them when transferring to the baking sheet. Space them at least 1/2 inch or 1.5 cm away from each other.

6. Bake for up to 10 minutes. Remove from the oven when the edges become slightly golden.

7. Let cool.

8. Enjoy!
