Earl Grey Yogurt Loaf with Lemon Icing

Earl Grey is citrusy, creamy and sweet all at the same time making it a perfect candidate as a key ingredient in a loaf! This recipe leaves traditionally flavoured loaves like lemon poppyseed in the dust - it's just that good. It's all topped off with a light lemon dressing that brings a punch of flavour. This Earl Grey loaf is one of my favourites, and now it's one of yours too.


Ingredients

2 cups all purpose flour

1 cup vegetable oil

2 eggs

6 Earl Grey tea bags or 1/4 cup of loose leaf tea

1 cup Greek yogurt

1 1/4 cups granulated sugar

1 tsp. salt

1 tsp. baking soda

1/2 tsp. baking powder

2 tsp. vanilla extract

2-3 cups icing sugar

1 lemon, juiced and zested


Requires

2 large mixing bowls

1 loaf pan

1 whisk


Directions

1. Preheat oven to 350 degrees F. Lightly oil the loaf pan and line with parchment paper leaving an overhang on the long sides.

2. In a mixing bowl, whisk together flour, baking soda, baking powder and salt.

3. In a separate bowl, whisk together eggs and sugar, until completely combined. You should have a light yellow frothy mixture before proceeding. Then, whisk in yogurt, vanilla and tea leaves. Then gradually mix in oil, whisking constantly until fully combined.

4. Combine dry and wet ingredients and whisk together well. Bake for 1- 1 1/2 hours until the loaf passes the toothpick test. Let cool.

5. For the icing, combine lemon juice and icing sugar gradually in a bowl using a whisk.

6. Once the loaf has cooled, drizzle icing on top and garnish with lemon zest.

7. Enjoy!
