Crispy Parmesan Potatoes

Potatoes and cheese, how much better can it get that than? Well... actually it does get better because these are crispy cheesy potatoes that are extremely simple and easy to make. They're the perfect side dish.

These really can be made with any potato, but I find russets are the best because they bake really well. This recipe also works for bigger chunks of potatoes, so if you prefer more potato to your cheese ratio, then cut your potatoes into thicker slices.
Ingredients
2 russet potatoes, sliced into 1/2-1 inch discs, then quartered
3/4 finely shredded parmesan
1-2 tbsp. olive oil
salt and pepper to taste
**Makes 6-8 servings
Requires
1 mixing bowl
1 baking sheet
Directions
1. Preheat oven to 410 degrees F.
2. In a mixing bowl, combine potatoes, salt and pepper, and toss/mix well. Then add in most of the parmesan (leaving some for final sprinkling), and toss potatoes, ensuring an even coat of cheese.
3. Spread out evenly on a baking sheet and sprinkle remaining parmesan on top. Turning halfway is optional; bake for up to 30 minutes and remove when crispy and golden.
4. Enjoy!
