BBQ Chicken Sheet Pan Pizza

Sheet pan pizzas are one of the best easy and creative dinners you can make in less than 30 mins. They're simple yet delicious - they're simply delicious! This recipe will likely have you ordering less take out and making more pizzas at home. Barbeque chicken pizza is sweet, tangy, cheesy and meaty and a major advantage about this recipe is that you likely have most or all of the ingredients in your fridge already.

This recipe really came together when I didn't have a plan for dinner and looked through my fridge and pantry to see what I could throw together for a recipe. I had some leftover dark chicken meat, some leftover pizza dough in my freezer, lots of red onions, mozzarella, canned pizza sauce, bbq sauce and some cilantro, and the thought of making a bbq chicken pizza came to me! This pizza can really be personalized to your taste, if you're a vegetarian, skip out on the chicken or substitute with jackfruit, if you don't love cilantro, use parsley instead, if you want more toppings, bell peppers would go well. I used tomato pizza sauce under the cheese but if you prefer to use barbeque sauce instead go for it!
Ingredients
1 lbs. pizza dough (here is a good recipe for it)
3/4 cup shredded or diced cooked chicken
1/4 red onion, sliced or diced
4 tbsp. pizza sauce (I used canned but you can make your own); or you can use bbq sauce as your base
1 1/2 cups shredded mozzarella (this will vary depending on how cheesy you like you pizza)
Fresh cilantro for garnish (optional)
2 tbsp. bbq sauce for drizzling
1 tbsp. olive oil to grease the pan

Directions
1. Depending on the type of pizza dough you made or bought, you may have to pre-cook it before you add your toppings, which often entails simply cooking for pizza dough for about 6-8 minutes. Otherwise, set your oven to 425 degrees F. Grease a sheet pan with olive oil.
2. Press and shape the dough into the pan, ensuring an even layer throughout. Pierce all around the dough lightly with a fork.
3. Spread an even layer of your base sauce.
4. Top with mozzarella, chicken and red onions.
5. Bake for 20 minutes. Then, remove from the oven, and drizzle with barbeque sauce. Bake for another 5 minutes.
6. Remove from oven and top with fresh cilantro (optional).
7. Enjoy!
