I'm a huge fan of tiramisu - but not a huge fan of coffee, so this is my take on the classic dessert. The cherry on top is that this recipe is incredibly easy and quick to make.
Ingredients
1 cup chai concentrate (I used the Tazo Chai Concentrate - you can also make your own)
Ladyfinger cookies (about 400-500g)
200 mL whipping cream
500g mascarpone cheese
1/2 cup granulated sugar
1/2 cup cocoa powder
Requires
Electric mixer
Large mixing bowl
Shallow dish
Deep dish to assemble and store the tiramisu
Spatula or spoon
Sieve or or sifter
Directions
With an electric mixer, beat the cream, granulated sugar, and whipping cream until stiff and peaks form.
Pour the chai concentrate shallow dish. Quickly dip the lady fingers in concentrate one by one and assemble the base layer of the tiramisu in the deep dish.
Once you have a base layer of lady fingers (you may have to crack some in half to fit the shape of your dish), spread a generous layer the mascarpone-cream filling on top, followed by a generous dusting of cocoa powder using a sieve or sifter. Repeat this process to create at least three layers, ending with the filling and cocoa powder.
Refrigerate for at least 1 hour.
Enjoy!
